Our Tests

In my own kitchen in St. Louis, I conducted a taste test with four 6-cup moka pots: my Bialetti Moka Express Alessi Moka Grosche Milano Red , and the stainless steel Ilsa Turbo Express . Dozens of variations are available from IKEA’s Scandinavian spin on the classic moka pot to the Mo. There are many variations, from the adorable and colorful Cocca Moka of MA Design Store to thousands of knockoffs found on Amazon. But we felt that our four choices represented the full range. For my taste testing, 16 coffee pots were made over the course of a week. With each moka pot, I prepared cafe con leche using Cafe Bustelo Piloncillo brown sugar (a cone-shaped container of brown sugar) and whole milk. You can also make black coffee from Intelligentsia House Blend coffee bean, Starbucks House Blend beans. The time taken to boil 20 grams of coffee in each pot from start to finish was also recorded. To compare the results blindly, my boyfriend poured about an ounce from each mokapot into each cup. I am not an expert in coffee, and I have only been drinking it for the past year. However I was able to notice some subtle differences in the brews. Bialetti Moka Express was the clear winner, producing the smoothest, most flavorful, full-bodied flavors. It is chocolatey and smoky with just a touch of acidity. The Alessi Moka’s brews were a little more acidic and slightly less rich, but they were otherwise almost indistinguishable from the Bialetti’s. It was possible to drink the Ilsa Turbo Express made of stainless steel, although they were slightly hollowed and flat. Grosche Milano Blue brewed brews that were too watery or flavorless were also acceptable. My Bialetti pot, which I’ve owned for many years and that my boyfriend and I have seen go through some wear and tear has been almost infallible. The only thing that has been damaged is the hinge. They fit well together and are relatively easy to clean. It can also be stored in my modern mid-century decor and used for functional art purposes when not being used.
